Sammanfattning

Seven patients experienced erythema, headache, palpitations and burning sensations after eating tuna burger. Tunafish -among other fish in the scombroid family - contains a high level of histidine. If the fish is stored at a too-high temperature, bacteria in the fish can convert histidine to histamine, which causes the histamine intoxication.The symptoms are often mild and of short duration. The symptoms are not caused by an allergic reaction. These seven patients were all treated with antihistamines and discharged after a few hours' observation.
