Recently, a remarkable connection between intake of gluten and development of type 1 diabetes has been recognised, based on both experimental and epidemiological data. Treatment with a gluten-free diet substantially reduces the incidence of diabetes in spontaneously diabetic NOD mice. Correspondingly, an intervention study in humans with prediabetes has shown promising although not conclusive results. Two epidemiological studies have found a fourfold risk of developing autoantibodies against beta-cell antigens if gluten is introduced during the first three months after birth.
